Roasted Pork Belly with Chinese Five Spice

Method

  1. Preheat the oven to Gas mark 4-5, 180-190˚C, 350-375˚F.
  2.  Take the flat piece of belly, dry the rind and score deeply with a sharp knife. Rub the rind all over with Chinese five spice, oil and salt. Line a shallow roasting pad with foil and place the pork onto the foil and tuck around the joint.
  3. Open roast for 2 hours. When cooked, allow the pork to rest for 10 minutes before serving.
  4. The apple sauce; place all ingredients into a small pan with lid. Simmer with lid on for about 10 minutes until the cooking apples are fluffy. Mix well together and put to one side.

  • About 900g/2lb piece of pork bellly - boneless or bone in
  • 15ml/1tbsp chinese five spice
  • Oil
  • Salt
  • 2 Cooking apples, cored, peeled and sliced
  • 1 Eating apple, cored and sliced
  • 30ml/2tsbp brown sugar
  • Splash apple juice or ginger beer
  • Pince chinese five spice
